Roasted Chicken Earth's Marinade

Twenty two years ago I was introduced to a family recipe that would then be developed and become Earth’s Marinade. I set the intention to make Earth’s Marinade a low sodium marinade since most marinades are high in salt or high in  sugar and either have stabilizers, pasteurized or come as a dry seasoning with MSG. Seeing its versatility and potential as an all natural fresh marinade of this new found treasure, I was excited to explore its possibilities. 

One of the first recipes that came to mind was using it on Chicken. As a chef, mother, at the time wife and fitness trainer, I wanted to make dishes that were simple to make, flavorful and healthy.

What I enjoy about using Earth’s Marinade on Chicken is that you can marinade 1-2 days prior or 1 hour prior. 

Once marinated and roasted you can serve it fricasse style, make it into a chicken salad, grilled panini, add to pasta or as a chicken soup. 


Ingredients:

Organic whole chicken
½ cup of Earth’s Marinade

 

Directions:

  1. Preheat oven to 350ºF 
  2. Use skewer or slicing knife, make insertions on chicken 
  3. Coat the entire chicken with Earth’s Marinade, add additional herbs and seasoning salt and pepper etc… as you desire.

(Note: You can marinate chicken 1 to 2 days prior) 

  • Place chicken in a baking dish covered in aluminum foil. 
  • Place in the oven, bottom third tier
  • Cook for 1½ hours, rotating chicken every 30 minutes to achieve an even roast
  • Remove from the oven and set aside 

Note:

Season your veggies in Earth’s Marinade then grill or suate 
Flavor boiling water with Earth’s Marinade when making mash potatoes 

 

Chicken Drumstick Option: 

  • Preheat the oven to broil setting (high mode)
  • Use skewer or slicing knife, make insertions on chicken 
  • Coat the entire drumsticks with Earth’s Marinade, add additional herbs and seasoning salt and pepper etc… as you desire
  • Place drumsticks in a baking dish 
  • Place marinated chicken on second top rack 
  • Cook for 10 minutes, flip over for 10 minutes, same temperature
  • Turn broiler to low mode, flip drumsticks and cook for an additional 10 minutes. (30 minutes total)
  • Remove from the broiler and set aside
